What you need

The method

  1. Dry Brine. Pat the steaks dry. Salt generously on all sides. Place on a wire rack over a sheet pan. Refrigerate uncovered for 6–24 hours.
  2. Prepare. Remove steaks from the refrigerator 30–60 minutes before cooking. Season with fresh black pepper. Insert a probe thermometer.
  3. Reverse Sear. Preheat oven to 225°F. Place steaks on the rack. Cook until the internal temperature reaches 115°F. Remove from the oven.
  4. Sear. Heat a cast iron pan until very hot. Sear Side 1 until a deep brown crust develops. Place a steak weight on top during the initial sear for maximum pan contact. Sear the fat cap until browned and rendered. Flip and sear Side 2. Add butter and crushed garlic. Baste until the crust is deep golden brown and the internal temperature reaches your desired doneness.
  5. Rest. Remove from the pan. Rest 5–10 minutes.
  6. Slice & Serve. Slice against the grain. Serve immediately.

One Better Tip

Dry brining seasons the steak throughout and dries the surface for better browning. Reverse searing gives you edge-to-edge doneness before finishing with a hard sear for maximum crust.
